Any ideas where to find some? I bought a 20 gauge Remington 1100 with a turkey choke for my boys two years ago. Problem is it takes 2-3/4" shells and the internet says shooting 3" turkey shells is a no no. I do not like the way the pheasant loads pattern.

Until you can find something better, you might find just some basic #5 or #6 field loads pattern denser and more consistently than those high-velocity "pheasant" loads. The per pellet energy should be sufficient out to at least 40 yards, your issue being maximum range for the high-probability kills with whatever pattern density this give you.
I believe the rule of thumb is the slower the velocity, the denser & more uniform the pattern, i.e. part of why the Hevi-13 loads are such low velocity.

I loaded some for a buddy of mine for his 6 year old. 2 3/4 high brass, 5 and 7.5 blend, using a 16 bushing of longshot. Put it right around 1200 FPS and he killed his first turkey Sunday at 31 yards. Little farther than we wanted but hey it's at the taxidermist so it worked out!

I bought some 20 ga 2 3/4 heavy shot at walley world sat for my grand kids. They only had 7 shot but they patterned very good @ 40 yds out of a factory choke.
I think i just saw some 20 ga turkey shells at academy today that were 2 3/4. they may have been hevi shot, but i can't remember.

My daughter uses 2 3/4 20 gauge Fiocchi Golden Pheasant 7.5. Best 2 3/4 lead load I've found for a 20. Dunham's in Tullahoma has some in 5 and 6 shot.
