Found this recipe on Allrecipes.com and gave it a try. It was simply the best venison dish I think I have ever had. Too good not to share.
Main Dish
8 slices bacon
2 venison tenderloins
2 tsp olive oil (split between tenderloins)
1/4 tsp onion powder (split between tenderloins)
salt and pepper to taste
Sauce
2 TBSP butter
1 8 oz package cremini (baby bella) mushrooms
2 cloves garlic chopped
1 TBSP or more chopped green onions
1/2 cup heavy whipping cream
1. Preheat oven to 375
2. Place bacon on slotted baking pan and partially cook in oven, making sure strips are still flexible. 6 - 8 min
3. Brush tenderloins with olive oil and season with onion powder, salt, and pepper.
4. Remove bacon from oven. Place tenderloins side by side on top of the strips and wrap them around both. Place in a roasting pan and put into oven. Cook until desired internal temp is reached. Recipe suggests 145. We pulled them at 135 and I wouldn't go any higher than that.
5. While tenderloins are cooking, heat butter over medium heat. When melted, add mushrooms and garlic. Stir and cook until mushrooms are soft. Stir in green onions then add heavy whipping cream. Heat thoroughly and serve on top of tenderloins.
