Batter done wrong

I cooked some frog legs the other day and thought I would try something different.
I found a batter recipie on the internet and tried it.
It was a double battered thing.
Dry then wet then dry again.
It took forever for them to get a pretty brown color and I guess I cooked them too long.

Anyway the batter was good but it was like trying to eat rocks.
Would cooking it too long make the batter real hard?
 
I would say yeah. I'm thinking your oil was not the right temp.

Frog legs cook fast. Almost fast as goose breast. There is no fat on them legs.

Last time I tried them I hand covered them in oil, stuck them between two pieces of aluminum foil on the (hot) Foreman griddle and I never moved. Mebbe 2 minutes, 3 at the tops.

How big were these legs?
 
I would say they were just normal size. Probably 6 inches long.
How hot do you normally cook them?
