Dreary weather calls for meals like this. Beef short ribs braised in beef stock and Guinness. I suspect I'll sleep well tonight.

Flour and sear the ribs in lard or bacon grease in a dutch oven. Once they have a nice crust, take them out and toss in a few cloves of chopped garlic. Add in beef stock, a bottle of Guinness, and a shot of tomato paste. Salt and pepper. Put the ribs back in and toss in some mushrooms. Braise in a 375 degree oven for 2 or 3 hours. Mashed potatoes make a good bed.

 
Most favorable cut from a cow. Looks great & bet it tastes as good.

I have a recipe for short ribs that uses prune juice & wine.
