Dove Quesadillas

Went on a quick hunt yesterday morning with my nephew. I wasn't sure how good it would be with the cold weather but we shot 11. We also missed about as many, and had some get by us without getting to fire a shot at them. We took some and sliced the breasts into thin strips, seasoned with this blues hog rub, and threw them in the skillet with a little butter. Chopped cilantro, thin sliced red onion, diced roma tomato, cheddar cheese,and a little Mexican blended cheese on top. Served with fresh garden salsa.

We have enough leftover to try and make some dove popper pizza but I'm tempted to just do this again because it was really good!
