Dry pork loin

We tried a different recipe Saturday and it didn't turn out real good and I really don't know why.
Took about a 2 pound piece of pork loin and rubbed it with dry onion soup mix then totally wrapped it in bacon.
Put it in the crock pot with 1/4 cup of water and cooked it about 6 hours.
It was "good" but not great. Meat was rather bland to me and it was dry.
It was so tender you couldn't even pick it up with a fork, had to take it out by hand.

I wondered if we needed more liquid but went with the recipe.
I left the "fat" on the back side of the loin in place before cooking.

Too long at too high of heat maybe?
I didn't know you could screw anything up in a crock pot. LOL

Everyone else said it was great but I think they were just being nice.
They did eat it all though so I dunno.

It just didn't impress me at all.
 
That's what I figured.
I know everyone is scared to death of pork and when I grill chops everyone says, I can't get mine to turn out juicy like that.
I tell them I marinate them but in truth I just take them up before they are ruined. LOL

Probably need to cut my cook time down to about 4 hours and it would probably be good.
 
Not enough fat and to long of a cook time. Try brining it next time. 1/4 cup of salt and sugar in a gallon of water and allow it to brine overnight. Makes a heck of a difference.
