East Tennessee deer processors

Every one I've used around Knoxville is just horrible.

Adams is probably the worst processor I've ever used
Broken Wings is bad
Rick Hill is so bad I laughed the last trip there
Coldwater farms is mediocre at best, but way out of my way.

In the south we were spoiled with high quality meat processors it seems, because the ones here are deplorable, especially Adams. I can't believe people use Adams except for it's well known and somewhat convenient. The only thing which makes Adams meat processing look good is his taxidermy work.
 
I've never had any bad experience from Adams, except the amount I pay when picking the deer up being higher than I was told when I dropped it off. I also observed one of the meat cutters smoking a cigarette through front glass while processing a deer. They make the best deer Summer Sausage i've ever eaten, and are pretty reasonable with basic processing fee. I'd be interested to hear your bad experience with them.
 
Adams is doing something right as he averages about 3k per yr and has for many years. Been in business for over 25 yrs as well!

What I despise about Adams is the fact that any ground meat you get is probably not your deer unless something has changed dramatically. This includes that nasty summer sausage as well.

I would be fine with eating any deer, but I've been around long enough to see far too many animals not handled correctly and meat possibly being spoiled. IMO, when you pick up your deer it should be your deer, period. I picked up a very small doe from Adams many years ago, and had one ham left whole for a roast and the ham I got back was physically too big to come off a 40 lb doe, it was the size of a trash can lid and still had skin/fur on it. I took it back to JO and asked him what the h*** that was, his response was whoops we made a mistake.


IMO if folks who fawn all over Adams ever actually got the chance to use a quality processor they would understand where I'm coming from.

The cube steak is stringy, the steaks cut horribly thick or thin, hair in the meat, bone in the meat, blood clots in ground meat. Etc etc.

The more I think about the wretched east TN processors the madder it makes me.

Rick Hill and is non frozen 2 week old meat is another jewel of this area.

I'm extremely particular after using several processors in the south (Bama, GA, and Miss) that are top notch. It's very different than Adams, there's no wading through blood and gore, no sharing of meat from other hunters' deer, and no non food parts in/on the meat you get. Meat wrapped in butcher paper is far better than anything vacum packed IMO as well.

We use Dean, his operaration is clean and you get your deer. Tell him the UPS recommended him. He will get a kick out of that.
 
If you ever do your own you will never let anyone else do it, deer meat and bone saws don't go together. It's unbelievable better tasting doing your own. Cut all of the white tallow of the meat and cut the muscle groups together to make it tender.
 
Mossy grove deer processing in wartburg is great Joe Lane is very clean $55 for 100lb and under and $65 for 101lb and up. I have never had a complaint with his work.
 
I have also been using dean for 6 years now does great work and he cuts 1 deer at a time and also lets it hang in cooler for couple days great guy to do business with
 
And it is also not sameday delivery ( drop deer off morning pickup that evening)
 
I've never had a bad experience at Adam's. I do not order the summer sausage. I do have a friend that killed a 78lbs. doe and got 18lbs. of meat. That seemed odd to me. Cold Water Farms is close to my house so I might give them a whirl this year. For mounts, I use Connie Calloway.

this is our 2nd year using joe. no complaints.

I'll never use Adam's again either. I don't have the time to tell you all the problems. I know there are plenty that have never had an issue.

feldmutze: pm me and I'll give you Dean's number (not sure if he wants his number out there floating around, however, I know that's good advertising.) I've used him for several years now. Haven't had any complaints yet.
 
I was doing a google search and this thread popped up....I just thought all the comments were funny.
 
Dropped a buck off at Rick Hill's on 11/17. While there a guy showed up to pick his deer up, they handed him a milk crate of meat and the guy said he dropped 2 off, where's the rest? Said they hadn't gotten to it yet. Made me question my decision to go there, but had heard Rick does a good job. Didn't hear anything back from him after a week so I called, reply....."we haven't gotten to it yet". Never did hear back from him. Lesson learned.
 
Two bucks in Dandridge always does a good job for me
