Looks awesome. I've been doing more and more fermentation myself. I picked the last of my peppers just after Thanksgiving and wanted to ferment them, but just ran out of time, so they ended up being chopped and frozen.

What "kit" are you using? I just use cheesecloth for mine, but the more I do it, the more I feel I should use the jar tops like you show. Also, what method are you using for most? I'm just pulling some things off the internet; some turn out good, some don't.

Here's some mustard greens that just finished fermenting and went into the fridge the other day.

Mustard greens sounds great! Looks good.

It's been trial and error, we're open to trying about anything. The pickle pipes (the tops the jalepenos are using) are convenient and speed the process up a little. I like not having to burp them which I'm sure disrupts the process.

We've used celery juice, kombucha, transfers from sauerkraut, etc. She also saves the whey from her cheesemaking-this seems to work the greatest. We used whey on dewberries back in the spring and it fizzed like crazy and turned out great.

The last ferment on jalepenos was too salty and I think I didn't give them enough time. I slicked these to hopefully speed up and used less salt.

I try to keep sauerkraut all the time. I really like it with caraway seed, fennel seed, and sometimes even a little mustard seed.

Interesting thread. I want to make some sauerkraut and the peppers and greens look great never thought of doing that with peppers or greens. Going have to do some research

If I ever go back to eating grains they'll be sprouted and fermented.

Day 3 and they're looking much better than the last batch of peppers. The color has changed to a pickled pepper look and the cloudiness is a good sign of fermentation according to my wife.

What's the brown stuff? Looks like the blob from kombucha.

Looking at your peppers next to the kraut makes me want to ferment some peppers chopped up in the kraut.

Ha ha, that does look a little nasty doesn't it!

That's actually fermented lemons. A friend gave me some Tuesday night.

The scoby for kombucha is on the shelf above. It is exactly that-a blob. :D
