Anyone made their own file powder? I've read contradicting results online... pick the leaves in the fall, pick them in the spring. Is one better than the other? I'm about to go pick a bunch of leaves before they all turn red so I can dry them and grind them up and learn to make gumbo. Is there anyone here who knows about this? I guess any green sassafras leaf is gonna be good enough, right?
 
i cant remember when maw maw made it or how. shouldnt matter but in spring or summer the leaves will probably be more pungent. didnt really care for the flavor anyway. didnt care for the tea either. when i make gumbo or deer stew i use okra. i posted a pretty good gumbo recipe on here several years ago.

maybe LAman will chime in. if bowriter was still around he'd could tell you i bet.
 
I remember watching an Alton Brown "Good Eats" episode where he visited a coonass somewhere in Louisiana that still made it with a wooden bowl and stick. See if you can find it maybe.
