First go at venison heart

TN, how did you cut that up? The one heart I did, I cut across the horizontally and I got meat that looked like donuts (those heart chambers are pretty big!). So I'm looking to cut the next one up like you did yours.

I sliced it vertically. About 1/3" slices.
