Good friend brought some pickled eggs to camp this past spring and they were great. Had to try the recipe myself. Loved the little smokies and carrots as well. Recipe as follows: 3 heaping tsp minced garlic, 5 habaneros,5 jalapenos, 1large white onion,5 cups white vinegar, 1 cup Texas Pete, 3 tblsp crushed red pepper, 3 tblsp creole seasoning, little smokies and baby carrots. Makes 2 dozen eggs. About 4 qt jars. Now to wait at least two weeks :roll:

So that's enough vinger to keep the smokies from spoiling? I've never seen a pickling recipe where meat was added to add to the flavor.

heat the liquid to boiling before adding to the jars. first for me on the little smokies as well. will keep these in the fridge. don't think they will last long enough to spoil around here :lol: I have seen pickled sausages before?? actual recipe came from chef kevin dean. says he keeps them in the fridge but heard of people keeping them in the pantry
 
I used this recipe about 2 months ago and I just made 2 gals of these last week end for deer camp! This has got to be the best pickled egg recipe I've ever had!!
 
Thought I'd give them a try.......
Time to wait, wait, wait now.

Got a surf fishing trip on the Outer Banks coming up at the end of April. I'll be making a big batch of these for that trip.
 
I opened a jar of mine....... very , very good. I held off on the habanero's.
They are spicy, but not "hot"
Very happy with them !
