Fried chicken





Soak in buttermilk and hot sauce for a few hours

Buttermilk, seasoned flour, egg wash/hot sauce mixture, back in the flour, back in the egg wash, one more dip in the flour then into the fryer after shaking off the excess.
 
Been craving my grandma's fried chicken. She been gone a long time. Tried a time or two over the years and just never did it well. Either greasy or overcooked. Let see a tried and true recipe for dummies :D

You can never hurt chicken by brining it the night before you cook it. That'll help you with the overdone part.
 
Moma always used lard, That about the only thing I use it for these days, also only a couple times a year, other methods or a oil that's not as bad for you.
