You are missing out as far as the heart is concerned, it is every bit as good if not better than the tenderloins. I used to keep the liver, and have cooked it a few times but have lost my taste for it. But the heart, every time, and even aim to miss it.I don't eat deer organs or guts, not adverse to it but just not worried about not eating everything on a deer. I would just have to pay a fine for wanton waste if they ticketed for throwing guts away. Reckon been more than a few pots of deer chitlins made back in the day but that ain't me
