Instant pot whole frozen chicken

This was the 2nd time I have done one. 5lb whole frozen chicken: seasoned with salt/black pepper/smoked paprika/garlic powder/onion pwder/2bay leaves/sprinkle of thyme/rubbed down with olive oil first. 2 Carrots and 2 celery stalks and half of an onion in the bottom of instant pot. Cooked on high pressure for 45min, 10min natural pressure release. Then open vent.

Chicken comes out great completely cooked. Skin is rubbery. But I used the chicken broken down for chicken stew (another recipe). But you can do a whole frozen chicken in the instant pot in 45min or so. Take it out and crisp up skin in the oven on broil(havent tried that way yet).
 
I'll have to try this. We use our Instant Pot all the time, but I've always been reluctant to cook frozen meat in it. If it fails, at least we'll have some good stock.

I have only done a whole frozen chicken..so for roast, or boneless breast etc..look up some videos for meats. The whole chicken I debone/de-skin break it down and use for chicken stew along with the great stock from the frozen chicken. Chicken stew is what we call it. Think chicken noodle on roids. Lots more veggies seasoning etc.
