Jerky

I am gonna make some turkey jerkey.Do you need to slice the turkey breast crossways or length wise?
 
Nice Jerk..and yep that's what I have found too usually a 45-60% weight loss depending on how dry I make the jerk. I can still make it ALOT cheaper than a bag of Jack Links or any jerky store.
 
Looks great! I'm took a shortcut and marinated 20lbs in Allegro mix of hickory and spicy and just dehydrated-no smoke out of laziness and for sake of convenience. For the effort it was ok. The kids love it, but my wife and I prefer simple course sea salt/cracked pepper over post oak smoke.

I have close to 50lbs sliced and ready to season. I think I'll smoke this as soon as humidity drops some.
