Meat sticks

Going to try making some soon as we have extra venision. My plan is to make 10 pounds of sticks for starters.

Do you folks use premade seasoning packets or do you follow a recipe?
Am going to use 17mm casings, plenty of sources sell them. Amazon, Lem, Ebay, etc.
Any difference in quality?

If you follow your own recipe please share.

They have everything you could need and even instructional videos to watch.
I have tried different seasoning blends from them and so far have no complaints on any, as far as sticks, the Texmex is awesome but DO NOT go heavy on the season.....that stuff is SPICY!!

I just made some brats that turned out awesome.
 
Yes Waltons is great to deal with good seasonings and lots of info on the website. I use 19 or 21mm casings (its what I have on hand) that came from LEM and Waltons both are good collagen casings. For me I have found unless you do a lot of sausage or smoking meat for that matter. Mixing your own seasonings is more costly that just buying a premix(you can always tweak a premix the way you like it) , then you have the left over bulk that can lose flavors over time.

ETA: I have started vac sealing my left over seasoning now. They stay fresh a lot longer that way. I still buy the premixed though. Try waltons pepperoni unit seasoning. Their brats and hot Italian sausage as well as the summer sausage seasoning is great to.
 
We ended up buying two kits from Cabelas. A kit included enough spices to for 25 pounds of meat and the casings. $26.99 per kit.
