I kept it real simple.

4 quail in pot at 8 am this morning on high.

1 can of Cream of Mushroom soup

1 cup white cooking wine.

Penzys season that said chicken on label.

2 shallots sliced thin.

Good dose of black pepper.

1 can chicken broth

Kidney Doc said no salt.

Pot on high 4 hours

Then pot on low 7 hours

The last 1.5 hours I dipped with slotted spoon to remove bones.

A serving of rice with crock pot quail on top.

I definitely will do this again.
 
No salt?
1 can of cream of mushroom has well over 2000mg of sodium
Depending on brand 1 cup of chicken stock is over 600mg of sodium. All the canned stuff is pretty high that ive seen.

Kitchen Basics has a no salt added stock that is around 130mg per cup and its good. You can get Pacific brand bone broth with only 90mg also but it aint cheap. Whole Food's 365 brand is around 110mg also and its kinda cheap. If you have a Costco membership they normally stock a low sodium bone broth too.

Im pretty much up on fighting the excess on sodium in most of the common food items and know a few creative ways to make it more tolerable.
 
Sounds good and I am positive the smell was great.

as for salt.......
After my heart attack I had to read every contents list. Wife HID every salt shaker in the house.

Seems like Salt is everywhere except in the fresh vegetable aisle.

Canned soup is almost as bad as doritos.

Became a better cook, had to try/taste/try again before I got recipes right.
 
Celery is also high in sodium. Oddly MSG only has a fraction of the sodium of table salt and helps a lot. "No Salts" are potassium based so you have to use caution with those too if kidneys are not working correctly. They also only work well on meat. Pretty much worthless for veggies.

Things you can buy with no salt added

Nacho chips...yeah you can really get them.
Canned beans but dried are simple to make if you got the time.
Diced tomatoes...Hunts has several no salt added products and Ro-Tel has them with green chiles
Williams Chilli mixes has 3 with no salt added.
Several brands of chicken and beef stock/broth but the Pacific Foods and Costco ones are by far the lowest in sodium. Highest in protein too.
Herb-Ox bullion offers a ZERO sodium but it does have high potassium. ( only an issue for some renal failure patients)
Heinz no salt added ketchup. Taste good actually but again it has added potassium
V8 has a very low sodium juice
SpicesInc has a huge selection of no salt added seasonings and spices you can use to make you own.


Other considerations
Increase plant based proteins in your diet....Things like legumes (beans) and soy.
Use avocado oil and rice bran oils especially when eating food high in animal fat. It balances them out a little.
Black Garlic (90-120day)....no science to back it up but its done wonders for my dad.
Asparagus and fresh pineapple....helps the body digest meat protein better. Asparagus is also a natural diuretic.
Not all phosphates and potassiums are as bad as others. Naturally occurring ones in plants are not absorbed nearly as easily as from meats or chemical additives.

Most of all, enjoy a good meal and to hell with the nutrition profile once in awhile. Food is not just about nutrition. It not likely 1-2 a week made whatever way makes you happy is gunna make much difference.
