Need a turkey sausage recipe

I'm having trouble eating an entire half turkey breast and was thinking that a sausage would be good and healthy. Does anyone have a good but simple recipe for turkey sausage? It can be a breakfast sausage or a brat. I'm not picky as long as it's good.
 
Sausage from a single turkey breast? That'd be tough to portion a recipe for. You might have trouble even getting an equivalent amount of fat. I'd rough-chop it with a chef knife enough to resemble a coarse grind. Mix in some chopped spinach, an egg yolk, grated parmesean cheese, and some Italian bread crumbs. Make some meatballs & brown them in a skillet. Simmer in some good red sauce, and eat it how you'd like.

Damn right!!! I was a Hellmans fan for years. Its good but Dukes rocks for a turkey sammich. Blue Plate is even better if you can find it. Its all yolks, no egg whites.
 
I'm probably too late to this, but do a Google search on Steve Rinella turkey sausage. I've made it before and it's good. You'll probably have to play with the ratios a little. When I made it I substituted smoked bacon for the pork fat because it's what I had on hand.
