New grinder

I bought a #8 LEM grinder. It should be here next week. Any tips or tricks on using it the first time? Any special instructions on how to clean it and prep it for my first run?
 
I took mine apart and washed soap and HOT water.

The plates I got a really stiff plastic bristle brush from home depot. I also took an empty walmart relish jar, filled it half way with canola oil, and keep my plates in there. I fish them out when I am ready to use them.

NEVER, NEVER EVER, NEVER EVER EVER EVER put anything on that grinder in a dishwasher.
 
I tried hog rings for sealing those tubular meat bags. Royal PITA. I would like to know how you guys can make a hog ring tight enough to hold the end of the bag shut. The end of the bag can't be any bigger than 1/8 of an inch in diameter after it is twisted shut. The pliers and hog ring only closes down to about a 1/2 inch circle.
 
its furly straightforward, wash the grinder parts and pan with hot water and dawn to remove the factory oil coating. i use a pipe cleaner and q tip soaked in dawn to clean out the grinder plate holes. dry everything and use canola or other salad oil to coat the parts and especially the grinder plates. like TAFKAP said do not put in dishwasher.

here is how i package my ground meat for meat balls, chili, etc. quart freezer bag with meat packed flat and all the air out. then i wrap in plastic backed freezer paper. cheap and effective. each bag holds 1.5 lbs.
 
You need to put your grinder in the freezer so it will be good and cold and always grind the meat when its very cold,warm meat is sticky and pastety!

best tip, those grinders are worth every penny.
 
All the tips above I would x2. "I WOULD RECOMMEND" buying the foot pedal also. I do not have a sausage stuffer so having the pedal allows me to control the ON and OFF function of the grinder. This will allow you to fill the bags up and still keep both hands free which is a big help when using a grinder instead of a stuffer. I have a small scale I place under the bag when it fills to 1 or 1 1/2 lbs (whichever you prefer) then I set it aside. I use the slide through tape dispenser that Lem offers to seal the bags after I finish all the grinding. I also use their bags. At the end of your grinding you will have to push some of the meat through by hand. This went to the grill that day as my treat for the work.
