It's the season for beef stew, chicken soup, rabbit stew, gumbo, and chili. :stir:

I made some beef stew last night and while looking at the ingredients (beef, carrots, onion, garlic, potatoes, celery, rosemary, thyme, salt black pepper, and beef stock), I got to thinking: this is probably the healthiest meal ever. You get protein from the beef and many nutrients from the root veggies. Even the rosemary and thyme have a few benefits. Hard to go wrong with this meal.

Sometimes I'll use chicken/chicken stock instead of beef, and it's just as good and healthy. In fact, I try to keep some around especially during cold season.
 
Now is when rotisserie chicken shines, pick the meat and then make stock of everything else. Chicken and dressing or dumplings the easy way.
 
I love some hot soup when the weather turns cold. Beef stew sounds great. I typically make chicken tortilla soup
