This is first try at making a stuffed snack stick. Used deer and ground chuck made 12lbs (4lbs of deer and 8lbs of 80/20chuck). All the deer I had ...at the moment..Used Weston grinder with med course grind plate(2times), Weston 11lb stuffer with 13mm stuffing tube. Hi Mountain snack stick kit--- seasoning, cure and 19mm collagen casing. I mixed the seasoning with 1.75 cups of water then mixed it in the meat, after that mixed the cure with 1 cup of water and mixed it in the meat until sticky. Loaded stuffer and result is the picture. Not sure whether I will use the smoker or dehydrator tomorrow. May try both.

I recommend it. I had never done stuffed snack sticks before. Now my favorite for ground snack stick (vs not stuffed). I ended up doing these in my Excalibur dehydrator, just made loops with the long strands. Took about 10hrs to get where I wanted them and an Internal temp of 153 when I pulled them. Big hit with the family. I got one bag left. Vac sealed I think it was 12 bags of 7 sticks and bag weighed 7-5-9.0 ounces.

I will probably do another batch in Hot/Cajun/Ground black pepper in the next couple of weeks. Might add some cheese to the hot or black pepper blend.


But yes give it a try. But be warned once you do it no slim jim or jack link store bought is going to stack up.
