I'm no expert so dont quote me, but I think it develops naturally since they pull their chest into a limb every night from about 2 weeks old on. So a genetically "wild" turkey raised in a barn yard eating cracked corn and chicken feed until it got 35-36 pounds would have an identifiably different breast bone.

Yes that notch develops from sitting on the limb. It's what makes the big ball form on the tip of the breast bone if I'm not mistaken

For the facebook folks... He has a facebook acct with a couple other photos and the bird seems a lot bigger looking in them. One photo is with the bird hanging on the scales.
