I've recently found that Quesadillas freeze/thaw very well. On a whim about a year ago when we had leftover grilled chicken I decided to make Quesadillas with it. It made about 5 of them out of 10-inch tortillas, way more than I could eat. After cutting them into eights, I put a line of them on aluminum foil rolled the foil once, stacked another line and rolled it again so the individual slices weren't touching each other (repeat until they were all rolled up). They weren't exactly air tite but sealed fairly well. They warm up wonderfully in the toaster oven. Its an easy grab and go lunch for work, snack, or dinner when no one feels like cooking.

...just thought I'd share.
 
This will be used on our next car camping trip. I have made breakfast burritos and wrapped them in foil. In the morning, i'll place them on a grate over the camp fire and have a decent meal when I wake up without the mess. Just don't tell Taco Bell I raid their condiment counter. lol
 
I can never make great quesadillas. I'm sure it isn't rocket science. Is there more to it than taking a soft tortilla, sprinkling chicken and cheese on it, folding it over and heating it up? Is seems like some places use a sauce within but I may be wrong

Did your quesadillas have any protein or veggies in them? Curious to how they would freeze?
