Salt Fat Acid Heat -Netflix

Ruhlman's TWENTY was a great book for me. It explores twenty of the most basic ingredients & methods, and gives recipes for each. The chapter on "SALT" got me into making my own bacon & exploring curing meats.
 
amazon prime has a lot of good shows too. "handcrafted" is a pretty good one.

speaking of Rhulmans twenty book and the salt section. a little hint: good fish sauce should not smell like catfish charlies stink bait. those fish sauces are cheap commercial, quick made sauces that have anchove extract, water sugar and preservatives in them and smell to high heaven. authentic fish sauce should only have fish and salt on the label. red boat and SON are 2 affordable brands. same goes for a good premium shrimp paste, which still is pungent but doesnt smell like rotted shrimp.

Same goes for all seafood products. Fresh shrimp, fish, crabs etc, does not have a bad smell. Trust your nose.
