Well the plan was to put this on yesterday and let a little cherry/hickory smoke hit it before searing and slicing but the stupid wind and rain just made it miserable to be outside. I decided to rub it with olive oil, salt, pepper, and some Blues Hog fajita rub, then sear it in a skillet with some Kerrygold butter before finally throwing it in the crockpot with a bit of beef stock and fresh squeezed lime juice to keep it moist. It was way better than I thought it would be! It would have been better off the grill but there wasn't anything wrong with this meal. Had some green chile sauce, pico, and Mexican blend cheese thrown on for good measure. The wife also made some iced oatmeal cookies that were delicious!
