Skinning a turkey for taxidermist

Friend of mine has started doing taxidermy work and has gotten good at deer and practiced with a few bear mounts. He wants to try a turkey and I would've liked to put today's in the freezer for him to try and practice with but I didn't know what your supposed to do with them before you freeze it? Do I gut it? If so how? Are they any videos on it?

Either just take him on to taxidermist or freeze it

Just freeze it and take it to him. Taxidermist will cut it from hip to hip

Turkey taxidermy is arguably one of the hardest to do, skinning it isnt much easier.
