Skinning a turkey for taxidermist

Friend of mine has started doing taxidermy work and has gotten good at deer and practiced with a few bear mounts. He wants to try a turkey and I would've liked to put today's in the freezer for him to try and practice with but I didn't know what your supposed to do with them before you freeze it? Do I gut it? If so how? Are they any videos on it?

Turkey taxidermy is arguably one of the hardest to do, skinning it isnt much easier.
