I think that I finally got it right this time. The filing was cream cheese, carmelized onions, and bacon pieces, then pepper jack and sharp cheddar (gonna try Gouda next time). Wrapped in bacon and sprinkled with homemade bbq seasoning
I did a slight different version of that on Christmas Eve . I butterflied a backstrip, spread cream cheese, sauted onion, jalapeño and bacon and smoked it. Not a piece left. It was a bigger hit than my brisket.
