Everybody probably has a recipe. We just got back from Surfside beach SC. Took some yellow quash and zucchini with us from the garden and made a squash casserole, it was outstanding:
Get your squash young before seeds get to big. Beat 2eggs sit aside. Need about 8 all yellow or half and half with zukes. slice about 1/4in thick. Sautee some onion, bacon(much as you like) garlic, olive oil, red pepper flakes in skillet about 5min. Add squash black pepper and salt Sautee until squash is tender but not mushy. Transfer all to a bowl. Stir in sour cream, extra sharp white cheddar cheese(or your cheese of choice). Stir in eggs and mix it all up. Spray down a casserole dish or coat with butter. Dump the squash mix into the casserole dish and smooth out. Top will crushed ritz crackers and alittle more cheese. Bake at 350 until bubbly.
There was none of this left, also a hit with teenage to toddler kids. Next time I make it (probably tomorrow, got back and plenty of squash to use in the garden) I'm going to add Cajun grilled chicken and broccoli to the mix. Seasoning, sour cream, cheese, bacon all to your taste. Didn't really measure anything just threw it all together. Had it with smoked pork loin, mashed taters, rolls and salad.
