Two pork shanks braised off in pork stock, tomato, onion, carrot, celery, rosemary, bay leaf, garlic, and red wine. Pull and shred the shanks, blend the sauce, add back the meat, and cook down another hour. Butternut squash dumplings in the side. I love a good braise. Was good storm survival food.

Shanks are the most under-appreciated chunks of meat on any animals. I quit hanging my deer by the Achilles just so I could preserve the couple inches of meat I used to lose because of it.
