Stuffed peppers w/ Italian sausage and cheese

Some of my bell peppers and pablonos. Filled with Italian sausage and pepper-jack cheese. I boiled the peppers for 15 minutes before cooking in the oven at 350 for 30 minutes and 5 minutes on low broil. Pretty tasty, pablonos were too hot for me however. My Grandmother used to make them stuffed with rice dressing and they were excellent.

My Pablano peppers are not spicy till they reach a certain maturity or size. Then the heat comes on quickly. We harvest several young to freeze for pepper steak soup, pepper steak beef tips & rice & more.

Ours did great this year except no real heat to speak of. Maybe picked too soon? They were delicious though!!
