Turkey Thighs, Lard, and Sugar

Misleading subject line, I know. Since I got my turkey this year, I grabbed the thighs off the turkey I shot last year and threw them in the crockpot last night with water, a chopped onion, four smashed garlic cloves, some whole peppercorns, and a few bay leaves. This morning they were falling apart. I shredded the meat, ran the broth through some cheesecloth, and set it all in the fridge. Later on I mixed up a batch of dumplings. Flour, lard, baking powder, salt, and milk. Those got dropped in to the simmering broth and once it thickened up I added the turkey thigh meat back in to heat through. Unspeakably good.

As for the sugar, I've been craving a rhubarb pie. Seemed like it'd go good with the main course. And it did.



 
turkey thighs and legs are overlooked to often. if cooked properly they are delicious. great job on the turkey and dumplins! never had rhubarb pie but it looks great
 
That's legit! All you need is a big bowl of greens and I would be kicking in your door.
