Easy to do. 440 is a grade of stainless steel.

Edit…as is 660, apparently. I had never heard of that one. The stainless steels are out of my wheel house. Y'all would have to start buying a heck of a lot more knives from me before I could justify a heat treat oven!

I have a Winkler Belt Knife with Maple handle. It's one of the nicest knives I have for sure.
