I'd field dress her then let her hang for a few days to age the meat.

I had one freeze solid years ago in weather like this. Not fun. Had to use a saw zaw to cut her up

She'll hang for days till she thaws and then as long as the meat stays very cooled a few more days.
Ive been waiting for the weather to do this!
