2019 turkey cooking pics

Quick recipe is salt n pepper the pounded breast cutlets, dip in egg wash then dip in cassava flour. Bacon grease, avocado oil, olive oil or unsalted butter (I used bacon grease this time as I had some that was fresh).
Kinda fry/sauté the schnitzel. I use just enough oil/grease to cover the bottom of the pan and not submerge the meat.
My wife is very sensitive to wheat flour so the cassava works well and does something spectacular when it comes to tenderizing, of course no bread crumbs either. Other oils are just plain nasty and I avoid using them 90% of the time.

Good old collard greens and some champagne made for a great wrap up to a fun KY opener.

Cat... what temp and batter and how long do you fry those strips? That's what want to try
 
After finding out that I was Hyperglycemic, the wife refuses to cook any thing fried most of the time. She can make anything taste fantastic and actually has me eating and liking more vegetables. This was last night's dinner, nothing fancy but delicious.

350 degree oil fry till golden brown. Buttermilk on the strips then put in ziplock of seasoned flour and shake real good

If you like jalapenos, wrap a couple of slices with the seeds taken out between the turkey and bacon.
 
TN Larry.....just showed the wife this thread and I'm sure she'll take your advice on the jalapenos, she loves them. I'm going to get her to try AT's recipe, that looks good.

She had always used olive oil and found out it's not the best for you after it is heated past a certain temperature. Now all she uses is coconut oil and it truly is a fantastic oil, makes everything taste great!
 
Though pricey, avocado oil is pretty amazing as well and has a slightly higher smoke point and Ghee has a really high smoke point.

When I have fried fish and fries, its ketchup on the fries and Tartar on the fish. Now Ketchup goes good to flavor scrambled eggs. I like Ranch on chicken nuggets.

that's about how I like everything except the eggs. I don't like ketchup on eggs. Hot sauce yes but ketchup is a definite no go

I love ketchup or salsa on scrambled eggs. Can't eat them plain any more.

I knew I wasn't the only one. I also love salsa on scrambled eggs. Any you guys want to try it, use just a little ketchup to flavor. Don't douse it like you would a French fry.
 
And one of the most glorious parts of the Wild Turkey...stock
After separating the breast, wings, thighs and drumsticks I was left with the carcass and neck. Simply roasted in the oven and into a large pot for several hours. Nothing fancy here as it will be used in some Authentic Pozole, which I'm saving the drumsticks for.

Made some fajitas from last week's gobbler yesterday evening by the campfire. Got to be one of my favorite ways to cook turkey.
