I love carnitas! I suggest using the whole carcass and making some fantastic stock too if you've not already tried it.
Yes, the whole turkey is amazing. If time and location permit I like to pluck them to keep it from drying out and the skin adds extraordinary flavor.
If time is pressed I skin them out and cool down ASAP.
