It was so tender. I didn't slow smoke it. I had the smoker on 325, let it get hot, then put the meat on. They probably weren't in there but about 5 minutes each side. Like a sear on a grill. So tender!!Looks great! How was the texture? I've thought about trying this but thought the slow smoking process would make the meat tough.
I've never smoked medallions, but I've grilled, broiled, and seared them many times. Never tried it on the smoker. Did the pellets give good wood flavor to it?It was so tender.
