Looks great! How was the texture? I've thought about trying this but thought the slow smoking process would make the meat tough.
It was so tender. I didn't slow smoke it. I had the smoker on 325, let it get hot, then put the meat on. They probably weren't in there but about 5 minutes each side. Like a sear on a grill. So tender!!

I've never smoked medallions, but I've grilled, broiled, and seared them many times. Never tried it on the smoker. Did the pellets give good wood flavor to it?
