Crappie not fried

May still be too fried but it's good.
Blackened Crappie
1 tablespoon paprika
1 tablespoon salt
1 teaspoon onion powder
1 1/2 teaspoons garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon thyme
1/2 teaspoon oregano
1 tablespoon fresh parsley chopped very fine.

Mix above ingredients in bowl. Dip crappie fillets into melted sweat cream butter, then coat fillet with mixture. Drop into a very hot cast iron skillet in which you have melted about a tablespoon of sweat cream butter. I'd recommend to do this outside

Baked
butter, lemon pepper and dots pretzel rub or club crackers crushed up in a glass dish covered
 
Air fryer has been pretty good for me.

If you dont have one a blackstone griddle is great for using little oil but still get a fried effect I have done fish on it before just using cajun seasoning or salt black pepper and lemon turned out really good. Also consider an air fryer, Ive done fish in it before also. Blackstone's you can get 17", 22", 28" and 36". I have the 22in perfect size for wife and I very versatile cooking equipment. Both can help really reduce oil usage for cooking but still come close on deep fried.
 
My family absolutely loves pan fried (olive oil and butter mixed) crappie and anything else. Old bay seasoning is the star of the show.
Dip cold crappie fillets in melted butter.
Liberally sprinkle old bays on both sides.
Olive oil and butter mixed in hot skillet just enough to keep fillets from sticking.
I put these fillets on a stack of "yellow rice"
It's a huge hit whenever I fix it.
 
most of these recipes need oil or butter to keep fish from sticking to a baking sheet, skillet or blackstone.

I can't see how they'd be much all that much healthier than deep fried.

Grilled or smoked with the fish hanging away from flames and cooked on low would make the most sense but also take forever and be the most work.

I've put fresh fish in an airfrier and they came out chewy and weird. precooked nuggets, gordmans fishsticks and fries come out ok, but that's been it.

Maybe I did it wrong but I eventually broke down and fried them and that made everything right.
 
Please elaborate. Looks great. Fried fish is the only fried food i eat. But that looks incredible
You can use whatever coating you like either from a box or make your own with corn meal ect. Just rinse off the filets then pat dry, run them through the mix and lay them out on the air fryer basket. Then after you have them coated, spray with an oil, I use avocado oil spray. Do one side then air fry them for I think 4 minutes on one side. Pull out flip over spray other side. 4 more minutes then done. They look just like a traditional deep fry except none of the bad oil. And taste great.
