Pre Thanksgiving day cooking

Wish I was in a stand this morning, really pretty morning here. Just got my turkeys on the smoker a little while ago, cooking over good old Tennessee hickory. Will be adding 4 deer inner loins after a while. Wife told me all our kids and grandkids will be here tomorrow, plus maybe a couple of from her family.

Will be making pecan and fudge pies a little later. Anyone else cooking today?
 
Awesome. I'll be putting our turkey on the smoker about 5 in the morning. I'm going to spatchcock ours and use that Tony Chachere's injection. Happy Pre Thanksgiving! Need some pics on how it comes out.

I injected the whole turkey with the butter creole. Did one last year the same way and everyone liked it.
 
I had a brisket and a turkey in the freezer that I had bought on sale months ago. Debated about which to prepare. While turkey is more traditional…and I seriously considered thawing it out and putting it on the smoker. Instead, I opted for the brisket! That Texas Reuben sandwich I posted in another thread was the deciding factor. So, I'm gonna get up about 4:00 and get the fire rolling in my smoker. While not traditional, we are having brisket, slaw, tater salad and homemade mac-n-cheese for Thanksgiving here. Really looking forward to the sandwiches Friday more than anything though!

Edit: got so tied up thinking about my brisket I forgot about the OP's intent of the thread. 😂 Tonight I made some turkey breast, stuffing and green beans. Also had to open a can of the good ole jellied cranberry sauce…I love that stuff! So, I did do some thanksgiving cooking tonight as well.

I am hungry, but sitting in a stand thus morning. 4 inner loins on the top rack.
