Biologically, a buck is considered mature at 4 1/2. At that age, they begin to display different movement, social and behavioral patterns.

I say 4.5. I generally target these bucks on my personal land.

That being said, I will not hesitate to shoot a 1.5, 2.5, or 3.5 if I get frustrated, or as @Gravey says, "am mad at them" at the moment.
