Made up some great Short Ribs last night. A simple rub of kosher salt, black pepper and garlic. Three and a half hours on the smoker with Hickory and Mesquite. Tender and delicious.
I did them at 300° but I was wanting to go to 275° or so. Just couldn't get the temp down. I cooked the meat to an internal temp 200° then wrapped them in foil and let them steam for 30 minutes. Then rest for 15 minutes off the fire.Look delicious! What temp range did you smoke?

They aren't that expensive. Less than pork ribs usually. Depends on the cut. Mine came from a half a steer, and only got the short ribs. I should have asked for the brontasuarus ribs cut. Me too. Was in a place this summer that had them on the menu as a special. $36 for a rib. Granted it would have been enough meat for two people easy, but dang.Me as well

Took her to Red Robin in Colorado Springs after grocery shopping. Had fish and chips and ice tea. $50!!!
BTW: I really do prefer baby back ribs. Sams usually has them at $2.98/lb.
