Deer grind recipe

Go out to sausagemaker.com and check out all of the sausage spice mixes. I have bought a bunch from there including breakfast sausage and chorizo. If you are going to make patties or link sausage then you definitely need a good mix of fat.
 
Straight venison for us. If we wanted beef or pork we'd just buy it at the store.
I mixed my grind with cheap bacon for years. This last year I've just run straight venison and it's not been that much different.

If you add in an egg with the rest ground venison worstershire and seasoning before making burger patties it turns out just fine.

Of course, when making tacos and spaghetti there's less to drain off.
 
If you mix in bacon, the venison must then be fully cooked (past 165°). That's the biggest reason I'm 100% venison grind the whole way. Medium rare, even for the grind
