What do y'all add to your deer for grinding? I'm thinking about using pork butt. What's the ratios? I have a meat your maker 1hp on the way and I'm new to this.
I tried that this year; doesn't taste like there's any seasoning at all just ground venison/pork fat. Going to re-mix it with more seasoning.I use cabelas breakfast sausage seasoning.

Mix deer and boston butt 50/50. Season with Legg's country sausage seasoning. Use half again what Legg's recommends on the package. We stuff in cotton sacks and smoke it with hickory. Excellent sausage.I use cabelas breakfast sausage seasoning.

I mixed my grind with cheap bacon for years. This last year I've just run straight venison and it's not been that much different.Straight venison for us. If we wanted beef or pork we'd just buy it at the store.
