I will say this, it has been a couple years since I had FRESH bream.
All the cooking / eating I have done has been from the freezer.
We caught these and put them on ice while we were fishing and then dressed them as soon as we got home and then cooked them a few hours later.
The difference between them and the partial box of frozen I cooked with them was amazing.

They were indeed fantastic!!!
Wish I had some more to cook today. LOL
 
I ate several today that my boy caught and insisted that I clean them. I had forgotten how good they are, hadn't ate any in years. Delicious!

I pretty much do not keep fish anymore because I do not like eating frozen fish. Eating fresh caught walleye in Canada ruins eating frozen fish.

Fresh bluegill is for sure good also.

Have you ever tried vacuum sealing and then freezing. I started doing this a few years ago and it is definitely better. Not as good as fresh but not far from it.
