Omelet challenge

This is the WAY! LOL.

And for those looking to spice up said eggs: Chili Crisp. Asian aisle. Tender tummies need not apply-but those who haven't checked this out yet- sooooprise! Good stuff, IMO.

Not all chili crisps are the same. Momofuku is the gold-standard brand in that department. Others can range from "close enough" to just bad. The only one I've ever found that was FAR superior is a little ma & pa outfit in metro Nashville that no longer produces their version. It was delicious. My sister bootlegged us a bunch before they stopped making it, and I'm close to finishing my second-to-last jar.

Wife makes this stuff. We put it on all kinds of things. My latest omelet topping though has been Tajin. There is nothing that stuff isn't good on. I do like chili crisp on it too though. Great on ramen

Forgot David Chang did that-thanks for reminder, I'll have to try it! I stumbled into an Asian market in Knoxville and was pleased to find a bunch of real deal stuff-that started my Asian food experiments. Now I'm hooked.

Yes-to the ramen! I used it to stir fry some beef and stuff to throw into the ramen, very tasty. That said, didn't mean to get off omelletes... reckon I should try an Asian omelette for this thread! 🤔

I feel like there aren't a lot of rules around eggs. Seems almost all cultures eat them. I like finding new ways to fix em.
 
Tonight's omelette. Cheese with salt, pepper, and paprika. Sausage on the side. 😂

Last Summer I made several with fresh picked Chanterelles, I'll have pics to add to this thread this time around. They were dang good.

Sauteed the shrooms with onions and garlic first, tossed them inside the omelet with cheese. Last Summer I picked close to 6 pounds worth of those things. Most of them got thrown into omelets like this.
 
yes you do! But good eaten though!
I bought two 7.5 dozen boxes at Sam's this week. 4 bucks a dozen. As you can see I eat a ton of eggs being on the carnivore diet. But it's a whole lot cheaper than the two different types two diabetes medications I took before. I no longer take any medication for diabetes. Don't need it, blood sugar was 88 this morning.
 
Standard bacon and cheese with Tajin and parsley. Broke out that fine Chinette for it. This is the right size for me if I'm eating somewhat healthy. 2 eggs. If I do 3 or more I'm more tempted to load it up with more things that are bad for me. That said, if you ever have leftover pulled pork or Carnitas, highly recommend tossing it into an omelette
